Okay, so these got HEAPS of compliments, and it's about time I posted something here
Here we go!
Ingredients
250g softened butter
1 tsp vanilla extract
3/4 cup (165g) brown sugar
3/4 cup (165g) caster sugar
1 egg
2 cup (300g) plain flour
1/4 cup (25g) cocoa powder
1 tsp bicarbonate of soda
200g coarsely chopped dark eating chocolate
200g coarsely chopped white eating chocolate
Method
1. Preheat oven to 180°C (160°C fan-forced)
2. Grease baking trays & line with baking paper
3. Beat butter, extract, both sugars and egg together in a small bowl using an electric mixer until light and fluffy. Transfer to a larger bowl.
4. Place flour, cocoa and soda in a separate bowl and stir til combined.
5. Sift half of the dry mixture into wet mixture and stir til combined and mixture is smooth. Repeat with remaining dry mixture. Stir in chocolate.
6. Roll portions of cookie dough into smallish balls (I used a table spoon to approximate the amount of dough in a ball. remember the soda will cause the mixture to expand with heat).
7. Place balls of mixture onto trays 5-7cm apart. Bake cookies for approximately 12 minutes. Cool on trays.
